Testing the example in Maple 2017 I had no problems with showing the ü. I used the Kate text editor, and checking the setting I found that my file was saved in UTF-8 encoding. I would suggest to check which character encoding your editor uses. Any proper text editor will allow you to configure the text encoding used.
